Many of the cocoa trees planted around Ntui can be traced back to a collection compiled by the botanist Preuss in 1901, displaying a significant share of ancient Criollo from Venezuela and very different from the less complex cultivars from other West African countries. These are combined by a selection of more recently introduced Trinitarios.

The rapid expansion of cocoa production in the Mbam-et-Kim region of Cameroon has proven to reliably provide high-quality cocoa at consistent volumes.

The Ntui varieties are characterized by a strong basic cocoa flavour with a pronounced red-berry, fruity character. Additionally, there are nuanced notes of coffee, with variations depending on the specific composition of the cocoa cultivars used.

3. FLAVOUR PROFILES
